St Patrick’s Tower was originally built in 1757 for the Roe’s Distillery.
The Roes invested in their distillery and it was considered as one of the best equipped in Ireland and the UK.
At its height, it milled 1,500 barrels of barley a day, utilising over a mile of conveyor belts, elevator screws, five steam engines, seven 30ft by 7ft boilers with the addition of four factory chimneys to the skyline.

As part of the ongoing works to renovate the ground floor of St Patrick’s Tower, opening it as an event and exhibition space, one of the original millstones will be conserved.
Once the working heart of the windmill, one millstone would remain stationary while another rotated as malted barley, an essential ingredient in whiskey production, passed between them and was ground into grist.
